Eggs and Okura Fry

This is a simple side dish and delicious with rice.

For two to three people

Two tablespoons of either koi or usu dashi
One tablespoon of water
Ten okura
Three eggs
Sesame oil
Salt
1) Remove the stems and tips of okura. Cut into 2-cm pieces.
2) Mix eggs and dashi and water together
3) Dribble some sesame oil into a frying pan and saute the okura on high heat, adding a dash of salt.
4) When okura is cooked, drop in the eggs mixture, making into a scramble, careful not to overcook or move the scramble too much.
