Simmered sweet potato

What to prepare

1 sweet potato 
400ml water 
2 tablespoons koi dashi    
2 tablespoons mirin (sweet cooking rice wine)
1) Wash the sweet potato and cut into 2cm-thick round slices.

2) Cut a slit in the center of the sweet potato so that the flavor can penetrate easily.

3) Put the sweet potatoes in a pot with water and heat.

4) When it starts to simmer, lower the heat to low, cover with a drop-lid, and simmer for 5 minutes.

5) Add the koi dashi and mirin and simmer for another 5 minutes.

6) Turn off the heat and let it cool.
