Cold Nishin Soba (Herring cold-Soba)

Preparation (for 1 person)

Owariya’s Usu-dashi (concentrated soup stock : dilute 4 to 5 times with water)200cc
SOBA nlldoesHalf a bag
One piece of Owariya’s boiled herring
green onion (optional)

1) Refrigerate the soup stock.

2) Boil soba noodles in a large pot (2L or more) of boiling water over high heat for 3 minutes. Drain and place in a bowl.

3) Remove the herring from the bag and lay them sideways on top of the soba in (2), with the back of the herring facing up and the belly facing down.

4) Add chilled concentrated soup stock (4 to 5 times the volume of cold water) to the bowl as desired. Add shiraganegi (green onion) to taste.
