Nishin Soba (Herring hot-soba)

You can recreate the taste of Owariya at home by following the below recipe.
In Kyoto, Nishin soba (sweet herring hot-soba) is so also known as “Toshikoshi soba (end of the year Soba)“.

For one people:

Owariya’s Usu-dasi
(Concentrated soup stock : water mixture in 1: 3 or 3.5 ratio)
250cc
SOBA noodlehalf of the bag
One piece of Owariya’s boiled herring
Chopped green onions (to garnish)

1) Boil the soba in advance and soak it in cold water.

2) Boil the dashi mixture (stock)

3) Put (1) in hot water to warm it, then drain and put it in a bowl.
4) Put herring on top of soba and pour (2) stock. Serve with chopped green onions if you like.
