In Kyoto, Nishin soba (sweet herring hot-soba) is so also known as “Toshikoshi soba (end of the year Soba)“.
For one people:
|Owariya’s Usu-dasi |
(Concentrated soup stock : water mixture in 1: 3 or 3.5 ratio)
|SOBA noodle||half of the bag|
|One piece of Owariya’s boiled herring|
|Chopped green onions (to garnish)|
1) Boil the soba in advance and soak it in cold water.
2) Boil the dashi mixture (stock)
