Nishin Soba (Herring hot-soba)
You can recreate the taste of Owariya at home by following the below recipe.
In Kyoto, Nishin soba (sweet herring hot-soba) is so also known as “Toshikoshi soba (end of the year Soba)“.
For one people:
Owariya’s Usu-dasi (Concentrated soup stock : water mixture in 1: 3 or 3.5 ratio) | 250cc |
SOBA noodle | half of the bag |
One piece of Owariya’s boiled herring | |
Chopped green onions (to garnish) |
1) Boil the soba in advance and soak it in cold water.
2) Boil the dashi mixture (stock)
